Video Tutorial: Visual learner? Here’s how to make sweet cornbread from start to finish!


Happy 2021!! Here’s to praying this year will be gentle on us and return to somewhat normal! Did you make any resolutions? Start any new diets? Set new intentions?

I usually make a TON of resolutions and do pretty well with keeping most of them. However, I kept it light this year and made only three resolutions. 2020 was such a life-changing, self-reflecting year that my outlook on a lot of things has changed.

One of my intentions is to cook more for pleasure AND not just when I’m rushing to get dinner on the table or for Divas Can Cook.

 I noticed over the years that I’m usually in such a rush while cooking that I wasn’t enjoying it as much as I use to. I forgot how fulfilling the process of creating a meal from start to finish is for me.

Shopping for all of the ingredients, smelling the spices, chopping the fresh produce, hearing the sound of something sauteing, plating everything up, and watching my family devour it. Cooking with patience and love feeds my core. I’m dedicating 2021 for me. It will be a year full of what makes me joyful. Soul-satisfying experiences! I’m excited! 

To achieve this new intention, I’ve let a few things in my schedule go so that I’ll have more time to REALLY cook. Yall, I am LOVING IT, and naturally, my family is too! 

It’s like discovering a new passion. I’m so excited about next week because I’ve got some special peppers coming in the mail. I’m making homemade chili, and of course, homemade chili calls for homemade cornbread! 

I’ve got lots of cornbread recipes because we are a house divided when it comes to cornbread! My husband and kids prefers sweet cornbread, and I’m an unsweetened cornbread kind of girl through and through. But now and then, I crave this moist, sweet cornbread! It pleases everyone in the house, and is such a nice compliment to spicy chili.

I love this sweet cornbread because it has just the right amount of sweetness and rustic texture! I love soft cornbread, but I don’t want my cornbread tasting like cake. This sweet cornbread is so moist and tender. 

It’s finished off with a brushing of creamy honey butter that makes it so perfect!!

Here are a few tips to ensure that your sweet cornbread comes out perfect!

  1. Don’t over mix. Once you add the wet ingredients into the dry ingredients, be sure only to stir until combined. Over mixing will result in a dry cornbread.
  2. Cover with foil if needed. If the top begins to brown too quickly, cover with foil for the last 5-10 minutes. This will ensure a gorgeous, golden cornbread.
  3. Use yellow cornmeal. Yellow cornbread will produce a cornbread that has more texture and yellow color; white cornmeal will make a fluffier cornbread.

The Sweet Cornbread Ingredients

Yellow Cornmeal: Yellow cornmeal is coarse and gives a great color to cornbread, but you can use white cornmeal if desired though. Be sure to get the plain cornmeal and not cornmeal mix.

All-Purpose Flour: Flour will add the softness needed to make this cornbread tender.

Baking powder, baking soda, salt- These are the three leavening agents that I like to use in my sweet cornbread. It creates a cornbread that rises beautifully yett isn’t too fluffy and cakey.

Granulate Sugar: For sweetness.

Honey: For a “touch of honey” sweetness.

Eggs- Eggs bind the ingredients together, adds richness, and creates a moist cornbread.

Egg Yolk: Add egg yolk will add moisture and a deeper yellow color to the cornbread

Melted Butter-Butter gives excellent flavor and tenderness.

Oil- Oil adds to the moisture factor to create a cornbread that stays moist for days!

Buttermilk: Buttermilk adds flavor and moisture to the cornbread.

What to serve with sweet cornbread?

Sweet cornbread can be eaten plain as a snack with honey butter and extra honey if desired. I like to serve it alongside hearty meals like chili and stews.

Ingredients
 

CORNBREAD

  • 1 ½ cups yellow cornmeal
  • 3/4 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup granulated sugar
  • 1/4 cup honey
  • 1 egg yolk, room temperature
  • 2 eggs, room temperature
  • 1/2 cup unsalted butter, melted, (1 stick)
  • 1 tablespoon canola oil
  • cups buttermilk, room temperature

HONEY BUTTER (double if desired)

  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon honey
  • 1 teaspoon powder sugar
  • salt, pinch

Instructions
 

  • Preheat oven to 450 F. Grease a 8x8 glass casserole dish and set aside.
  • In a large bowl whisk together yellow cornmeal, flour, baking powder, salt, baking soda, and sugar. Set aside.
  • In a large bowl, mix together remaining ingredients until well combined.
  • Stir the wet ingredients into the dry ingredients just until all ingredients are combined. Do not over stir. It's fine if the batter is a bit lumpy.
  • Spoon batter into prepared pan and smooth out into an even layer.
  • Bake for 25-30 minutes, or until the center is set. (check on it at the 20 minute mark) Cover with foil paper during the last 5-10 minutes if it begins to get too brown.
  • Remove from oven and prepare the honey butter.
  • To make the honey butter, combine all the honey butter ingredients until smooth and creamy.
  • Immediately spread honey butter over hot cornbread. (Use as much as you like)
  • Slice cornbread into squares and serve with leftover honey butter if desired.
  • Store in airtight container.
