Oven Roasted Asparagus Recipe … So Good!
I’m really starting to get into eating asparagus since I’ve finally tried it roasted in the oven. If you’ve never tried roasted asparagus then honey, you are missing out.
It should be against the law to cook asparagus any other way than in the oven. They come out so tender, yet firm with a wonderful woody aroma. Â Even my toddler is crazy for these things and he’s not really a huge veggie eater these days.
You certainly can add some jazz to this roasted asparagus recipe by drizzling them with herb butter or grated cheeses but they are so good simply with a lil olive oil and salt.
I hope that you enjoy this easy asparagus recipe just as much as my family does!

Notes
Cooking time will vary based on the thickness of your asparagus. I cooked in a 425 degree preheated oven for 7 minutes. They should be tender to the bite and yet firm to the touch. When you pick them up they should not droop.
This was delicious! So much so that I am going to feature it on my blog when I get around to it.
I like asparagus, but I never knew how to make it taste quite right at home. Now I know that I should have been roasting/baking it (instead of steaming it) all along. I followed your recipe, but I also added a generous bit of lemon pepper (after reading the suggestion of another commenter). It turned out PERFECT!! Fast, easy, and fresh!
I am so excited to find your blog and try out all your great recipes! Thanks for what you do, and PLEASE PLEASE get print versions of your cookbooks soon!
I never ate asparagus until about a month ago. I prepared them the same as you did and they were delicious! Asparagus is now my favorite vegetable.
I love asparagus. I take 3-6 (depending on the thickness) wrap them in bacon. Use a toothpick to keep it closed and roast it in the bacon. MMMM GOOD.
When you wrap them in bacon do you cover the pan with foil? Or, do you just lay them in the pan and how long do they cook with the bacon is the time longer?
Made this tonight and it was so good. I usually buy canned asparagus, but, thanks to you I will be eating my asparagus Diva style – fresh, fresh, fresh. Thanks a lot.
Made this last night…”LOVED” IT! I plan on making this again… VERY SOON. Thanks for Sharing!
My hubby and I absolutely adore asparagus. We drizzle them with olive oil, lemon pepper and black pepper and cook them on the gas grill outside…it's the only way we eat them. I have never tried to cook them in the oven, however, I will be trying your recipe out this week.
