Apple Fritter Coffee Cake

*******WARNING**** This apple fritter coffee cake is so light, moist, fluffy and delicious that you will more than likely have two slices back to back. Don’t be too hard on yourself if when this happens. Just blame me and Nerdy Baker and move on. I can take it. (My husband told me to put this warning on this post)
If you love apple desserts just as much as I do then brace yourself for this baby. This apple fritter coffee cake packs all the flavor of homemade apple fritters in each bite. The cake is lightly sweetened with a buttery cinnamon flavor, the apples are perfectly tart and sweet and that perfect glaze hardens up beautifully just like on an apple fritter. GENIUS!
We love coffee in this house and coffee just isn’t right if it doesn’t have something sinful to go along with it. Yayyyy for cakes for breakfast!! The whole thing was gone in 24 hours, no lie. I’m not proud of this but it is what it is.

I saw this recipe on Nerdy Baker and adapted it to our liking and my occassional laziness. It is a WINNER for sure!!! My son would eat this everyday if I let him.
Get the Recipe: Apple Fritter Coffee Cake
Ingredients
- APPLE FILLING
- 4 cups granny smith apples, peeled, cored and diced. (about 3 large apples)
- 1/2 cup white sugar
- 1 teaspoon cinnamon
- 1 tablespoon water
- CINNAMON COFFEE CAKE
- 1/3 cup butter, softened
- 3/4 cup white sugar
- 1/2 cup apple sauce
- 1 teaspoon vanilla extract
- 2 eggs
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup sour cream
- BROWN SUGAR TOPPING
- 1/2 cup brown sugar, packed
- 1 teaspoon cinnamon
- GLAZE
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 4-6 Tablespoons milk
Instructions
- Preheat oven to 350 F
- Grease and flour a 9 x 13 pan. Set aside.
- Make the apple filling by placing the apples, white sugar, cinnamon and water into in a large saucepan.
- Cook until apples are tender. Juice will thicken as the apples cool. Set aside.
- Prepare the cinnamon coffee cake by creaming together butter and sugar in a large bowl.
- Beat in apple sauce, vanilla extract, and eggs until well combined.
- Mix in flour, baking soda, salt, and cinnamon until well combined.
- Mix in sour cream until well combined.Set aside.
- Combined the brown sugar and cinnamon to make the brown sugar topping. Set aside.
- Pour half of the batter evenly into the prepared pan.
- Spread apple filling evenly over batter and sprinkle with a third of the brown sugar topping.
- Top with remaining batter and sprinkle on the rest of the brown sugar topping.
- Bake for 30 minutes or until toothpick inserted into center of cake comes out cool (see note)
- While cake is baking prepare the glaze by combining powdered sugar, vanilla and just enough milk to make a glue-like texture.
- When cake come out of the oven, poke a few holes in the cake.
- Immediately spread the cake with the glaze.
- Let glaze sit for about 15 minutes to harden a bit.
- Serve and enjoy!

I made this cake a few days ago it turned out great. I had never made anything with cooked apples but I love it even with cooking it 7 mins passed the 30 min limit.. Thanks Diva!!

Hi! I have this in the oven now. I am super sad bc I was talking on the phone and forgot to add the brown sugar mixture over the apples 🙁 I hope it turns out okay without it. Also I almost forgot the baking powder because it’s not listed with step 7 but I caught it in the video. Anyhoo I hope I didn’t ruin it!

I enjoy your videos; they give me some good ideas, though I would use natural “Sugar in the Raw.” I like apples with only a good amount of cinnamon. Apples have great taste on their own. I would use whole wheat flour (maybe the pastry kind). Then I would skip the icy glaze. I have been delivered from white sugar. With adjustments similar to this, I would be able to eat one or two pieces and wait until the next day; with all the sugar, it would be gone in one day for me, and I am alone; that sugar keeps me overeating. I love your joy in your cooking. Hope you do not mind my comments.
