Here’s to a New Year! 2024 feels good, doesn’t it? I hope this first week of the new year has been good to ya!

I always like to start the new year with a few lighter recipes for those with healthy eating resolutions. 

January is usually the month I start slowly cleaning up my diet in hopes of a hot summer body. (it’s a hit or miss) This still allows for plenty of cheat days because, listen, I need my cheats throughout the week, or I’ll just crash and burn!

I’ve been in such an avocado mood lately and love this combo of guacamole and deviled eggs!

The ingredients are so fresh and delicious and pack a flavor my whole family devours!

So let’s make some fiesta deviled eggs!

Why I LOVE these Fiesta Avocado Deviled Eggs

  • No mayonnaise: As much as I love mayo, I realized the calories add up quickly when downing mayo-based deviled eggs! In this recipe, avocado creates a creamy texture, so you can skip the mayonnaise. 
  • Super flavorful: These eggs are great healthy party appetizers or snacks. When people discover that they are guacamole-infused deviled eggs without mayo, they’re always eager to try them out and pleasantly surprised. My kiddos love them!
  • Healthy ingredients– If you’re trying to clean up your diet, you’ll love that these ingredients are super healthy. Avocado contains healthy fats, potassium, fiber, and vitamins C, K, and E! Eggs are an excellent source of protein, so it’s a win.
  • Customizable: One thing I love about deviled egg filling is that it is so customizable to suit your taste buds. If you want it spicier, simply add more spices until your heart is content!

Tips for making the BEST Fiesta Avocado Deviled Eggs 

  1. Don’t overboil the eggs- Overcooked egg yolks tend to be a dull greenish-yellow and are extra dry in texture. I swear by my egg cooker for perfectly cooked hard-boiled eggs that produce easy-peel shells and perfectly yellow yolks! I take them out and rinse them with cold water as soon as the timer goes off. Easy peasy! 
  2. Use ripe avocado- Your avocado should feel soft yet firm when you squeeze it, and scoop out easily with a spoon. If your avocado isn’t ripe, you won’t be able to mash it easily and get the creamy texture needed for the deviled eggs. It will also have a very bland taste.
  3. Use a piping bag for filling: Deviled eggs are much easier to fill using a piping bag. Be sure to use a large tip so any bits of tomato or onion won’t get stuck.
  4. Taste it! Your taste buds are the best guide! So be sure to taste and adjust any seasonings to your liking.
  5. Serve the same day!  The fiesta avocado eggs are best served the same day to preserve their beautiful appearance. Avacodo tends to turn darker as it’s exposed to air. 
  6. Garnish it– Garnishes make these fiesta deviled eggs pop and look simply irresistible! The deviled eggs are delicious with a sprinkling of paprika, mined onion and tomatoes, and fresh cilantro.
  7. Chill before serving– These fiesta deviled eggs are best served cold. Chill them for at least an hour before serving for the best flavor.

How to make Fiesta Avocado Deviled Eggs Recipe

INGREDIENTS

  • Hard-Boiled Eggs
  • Ripe Avocados
  • Lime juice/lemon juice 
  • Tomatoes, minced
  • Red onion, mined
  • Jalapeno, minced
  • Spices: salt, black pepper, garlic powder, chili powder, cumin, oregano, paprika, parsley, cayenne pepper
  • Garnish: Smoked paprika, minced tomato, mined red onion, chopped fresh cilantro.

  1. Neatly cut hard-boiled eggs lengthwise and separate the yolks, placing them in a large bowl. Keep the egg whites for later use.
  2. In the same bowl, add avocado to the yolks and mash them together using a fork or potato masher until creamy.
  3. Add lime juice, tomatoes, red onion, and jalapeno into the bowl and stir well.
  4. Combine seasonings in a separate small bowl and then incorporate it into the avocado and yolk mixture. Stir until everything is well combined.
  5. Spoon mixture into a food processor or high-powdered blender and pulsate a few times to get an even creamier texture and bolder flavor.
  6. Taste the mixture and adjust the seasoning as per your liking. Keep in mind that the flavor will intensify once it’s chilled.
  7. Transfer the mixture into a piping bag fitted with a large circle or open star tip, and fill the egg whites with this mixture.
  8. Sprinkle smoked paprika on top and garnish with some minced tomato, onion, and cilantro.
  9. Store the prepared eggs in an airtight container and refrigerate for at least 1 hour before serving.

Common Questions

Can I add a bit of yogurt? You sure can, although I’ve never tried it with yogurt though. I’d suggest a tablespoon of plain, unsweetened Greek yogurt. You’ll need to adjust the spices since the yogurt will cool down some of the flavors.

What else can I add to these fiesta avocado deviled eggs? If you want to add more things to this recipe, try salsa verde, spicy mustard, chipotle peppers,  or taco sauce to kick it up a notch!

Can this recipe be used to make avocado egg salad? Sure can! It goes great with toasted tortillas.

I don’t have an egg cooker; what else can I use to boil eggs? Before I got my egg cooker, I used this technique for the perfect boiled eggs. You can also boil eggs in an instant pot, saucepan, or steamer basket. Total time will vary based on which method you use. Just be careful not to overcook.

Instructions

Notes

Serve the same day as prepared for a better appearance. Avocado will darken after the first day, but it will still taste fine.
