Instructions
Neatly cut hard-boiled eggs lengthwise and separate the yolks, placing them in a large bowl. Keep the egg whites for later use.
12 hard-boiled eggs, peeled
In the same bowl, add avocado to the yolks and mash them together using a fork or potato masher until creamy.
2 avocados, ripe
Add lime juice, tomatoes, red onion, and jalapeno into the bowl and stir well.
2 teaspoons fresh lime juice,
2 tablespoons tomatoes, seeded, minced,
1 tablespoon red onion, minced,
2 tablespoons Jalapeno, minced (I used jarred)
Combine seasonings in a separate small bowl and then incorporate it into the avocado and yolk mixture. Stir until everything is well combined.
½ +⅛ teaspoon sea salt,
⅛ teaspoon black pepper,
½ teaspoon garlic powder,
⅛ teaspoon smoked paprika,
¼ teaspoon chili powder,
½ teaspoon cumin,
¼ teaspoon cayenne pepper,
½ teaspoon parsley,
⅛ teaspoon oregano
Spoon mixture into a food processor or high-powdered blender and pulsate a few times to get an even creamier texture and bolder flavor.
Taste the mixture and adjust the seasoning as per your liking. Keep in mind that the flavor will intensify once it's chilled.
Transfer the mixture into a piping bag fitted with a large circle or open star tip, and fill the egg whites with this mixture.
Sprinkle smoked paprika on top and garnish with some minced tomato, onion, and cilantro.

Store the prepared eggs in an airtight container and refrigerate for at least 1 hour before serving.

Notes
Serve the same day as prepared for a better appearance. Avocado will darken after the first day, but it will still taste fine.
