Cinnamon Roll Pancakes (Homemade CinnaStacks!!)
Damn you IHOP and those addictive Cinn-A-Stacks Pancakes!!!!! They totally got me hooked and yall know how I am when I get hooked on something. If not, take a look here. Oh and here. You get the point. I HAVE to learn how to make it at home or either go broke. I’ve learned to just roll with my addictions until they play themselves out.
My little one woke up this morning asking for these pancakes. Well… actually…I kinda suggested it several times and told him a story about when I was little and got terribly sick from eating Apple Jacks. Finally he said,  “ok mommy I want cinnamon roll pancakes instead”.  So being the loving mother  that I am, I strolled into the kitchen to whip  me him up a plate of homemade cinnamon roll pancakes.
Recreating Ihops Cinna Stacks Pancake recipe was super simple: a basic pancake topped with cinnamon roll filling and cream cheese glaze. I basically just snagged it from my favorite cinnamon roll recipe and voila!!! You really can’t go wrong with it. I’ve used several cinnamon spreads and glazes trying to find the best one and they  pretty much taste the same to me.
This is definitely a recipe fit for a special holiday breakfast or brunch or the morning after when you want to make him/her fall in love again, hey I’m just saying.
Before attempting this recipe take a little time to plan and set out all of your ingredients. Â The pancakes and cinnamon spread needs to be hot at the same time. I usually make the cream cheese glaze first, then the pancakes, and when I’m on my last batch of pancakes I’ll do the cinnamon spread. If the cinnamon spread is left for too long it will start to get gritty. So this is definitely a serve immediately breakfast.
You can use any basic pancake recipe you’d like. I’ve included a simple one, if you need one.

Omg let me tell ya! I was looking for the perfect cinnamon (pancake) topping for MONTHS and thanks to you I finally found it!!
All the other recipes I tried turned out to be grainy and just didn’t quite taste right.
Yours though is a-ma-zing, so smooth!! Can’t use enough exclamation points lol
I used a buttermilk pancake mix from Aldi though + used my cream cheese glaze recipe.
THANK YOU!
Girls, let me tell you. I tried this recipe and my husband (who doesn’t even prefer to eat pancakes–he likes waffles, instead) and my sons RAVED over it! They absolutely loved it! I loved it, too! My husband thought they were the best pancakes he had ever tasted, which says a lot for him, because he’s not a pancake man. He let me know that if he’s to ever eat pancakes, instead of waffles, for me to make them this way. No doubt, I will do just that. Thank you so much for this recipe and for all of your great ideas. Blessings to you and your family!
My pancakes came out with a bitter taste. Is it the baking soda? Can someone help me remedy this problem… thanks
You put too much baking soda. It’s happened to me before.
My husband, boys & I loved this!!! Thank you!!!
Made this yesterday for breakfast along with your Sausage hash brown casserole. OMG. Yummy! So far I have made 3 of your dishes & I have loved everyone of them. Once again, my boyfriend simply loved it! I cant believe how EASY it was in the in!
I didn’t make the pancakes from scratch because a) I was pressured for time and b) i forgot to buy baking powder! . . . so I just used the boxed pancake mix (when I get the baking powder its on!) and I made the spread & icing. The cinnamon spread was easy & fun to make (aside from me constantly sticking my finger in it to “make sure it tastes right” 😉 ) . The glaze, however was a challenge. I ended up putting like 7 tblspoons of powdered sugar bc the texture of my glaze had lumps in there. It just wouldnt get smooth for nothing! But its okay because it still tasted DELICIOUS ! My boyfriend gave it a 9.5 because my glaze wasnt smooth like yours & I didnt make my pancakes from scratch. Hahaha. Thanks MO!
I came across this recipe when I decided I wanted cinnamon rolls but in pancake form, and honestly, I hoped for a written recipe. Because I like to do things at my own pace, it would’ve been nice to see the recipe and follow it at my own speed and go back and study some parts. And I realize you have the INGREDIENTS written, but not the steps. Also, youtube doesn’t work so I was highly disappointed. And yours seems to be the only recipe on the internet. Gee, thanks a lot.
