Cinnamon Roll Pancakes (Homemade CinnaStacks!!)
Damn you IHOP and those addictive Cinn-A-Stacks Pancakes!!!!! They totally got me hooked and yall know how I am when I get hooked on something. If not, take a look here. Oh and here. You get the point. I HAVE to learn how to make it at home or either go broke. I’ve learned to just roll with my addictions until they play themselves out.
My little one woke up this morning asking for these pancakes. Well… actually…I kinda suggested it several times and told him a story about when I was little and got terribly sick from eating Apple Jacks. Finally he said, “ok mommy I want cinnamon roll pancakes instead”. So being the loving mother that I am, I strolled into the kitchen to whip me him up a plate of homemade cinnamon roll pancakes.
Recreating Ihops Cinna Stacks Pancake recipe was super simple: a basic pancake topped with cinnamon roll filling and cream cheese glaze. I basically just snagged it from my favorite cinnamon roll recipe and voila!!! You really can’t go wrong with it. I’ve used several cinnamon spreads and glazes trying to find the best one and they pretty much taste the same to me.
This is definitely a recipe fit for a special holiday breakfast or brunch or the morning after when you want to make him/her fall in love again, hey I’m just saying.
Before attempting this recipe take a little time to plan and set out all of your ingredients. The pancakes and cinnamon spread needs to be hot at the same time. I usually make the cream cheese glaze first, then the pancakes, and when I’m on my last batch of pancakes I’ll do the cinnamon spread. If the cinnamon spread is left for too long it will start to get gritty. So this is definitely a serve immediately breakfast.
You can use any basic pancake recipe you’d like. I’ve included a simple one, if you need one.

Get the Recipe: Cinnamon Roll Pancakes (Homemade CinnaStacks!!)
- Basic Pancakes:
- 1 cup all-purpose flour
- 1 Tablespoon baking powder
- 1 heaping Tablespoon sugar
- 1/2 teaspoon salt
- 1 egg, slightly beaten
- 1 cup milk
- 2 Tablespoon butter, melted
- Cinnamon Spread
- 1/4 cup butter
- 1/4 cup brown sugar, packed
- 1 heaping Tablespoon cinnamon
- 1 Tablespoon half n half (may need more)
- 1 Tablespoon all-purpose flour (may need more)
- drop of vanilla extract (optional)
- Simple Cream Cheese Glaze
- 1 ounce cream cheese, softened
- 1 Tablespoon powdered sugar (may need more)
- Milk (to thin it out if desire)
- Pancakes
- In a large bowl, sift together flour, baking powder, sugar, and salt. Set aside.
- In a small bowl beat together egg, milk and butter.
- Make a well in the center of the flour mixture and pour the egg mixture into the well.
- Stir gently just until incorporated. It should still be lumpy.
- Let batter rest for 10 to 15 minutes.
- Simple Cream Cheese Glaze
- In a small bowl, mix together cream cheese and powdered sugar until creamy. Add milk if desired until it reaches a glaze consistency.

My 16 year old daughter and I prepared these
yesterday morning. And let me tell you, I, nor my
daughter, nor my husband, nor our 3 sons, have
ever tasted any pancakes that good!
My husband doesn’t even like pancakes that
much. He prefers waffles. But honey let me tell
you. He devoured these. Listen, that recipe is
so good that they really are addictive. While we
were eating them, we were all saying how we’ll
probably never go back to regular pancakes
again. And I just have to compliment you on.
these. They were sooooooooo good! They
were heaven like, really! The only adjustments
I made to it were that I used white sugar and a
little bit extra brown sugar. But that was only
because I didn’t realize at first that I was
supposed to use all brown sugar. I put a tiny
bit extra vanilla in the cinnamon spread. And
I also used a few little drops of almond milk
in my glaze, along with regular milk. I also used
my own from scratch, buttermilk pancake recipe,
which is very similar to yours.
But I did use YOUR cinnamon spread and glaze
recipes. And darling you really are all that. A
gift to the world and to my kitchen. Please
keep em coming. Oh and one more thing…
For those who thought it was too sweet, you may
want to just add a little more melted butter,
half and half and even a few drops of water and
keep stirring while it’s warming….then taste.

Made these this morning using the “fluffy pancake” recipe from allrecipes instead (it’s faster and only requires the extra ingredient of white vinegar) and it tasted sooooo good. All of this time I’ve been searching unsuccessfully for the perfect cinnamon roll recipe for me and I think this pancake recipe just might put a temporary halt to my search! Tastes JUST like cinnamon rolls and takes only about 15-20 minutes to make! I was a little apprehensive about adding an ENTIRE tablespoon+ of cinnamon to the spread (thought it might have been a typo at first) but the stated amount worked out DELICIOUSLY! I guess I’ll just have to buy more cinnamon! I definitely would NOT recommend giving this to your kids or yourself three days(?!?!) in a row unless you’d like a dose of weight gain in the household, but as a once a week treat for the weekend, this recipe is perfect! Oh and by the way, regular whole milk worked in place of the half n half perfectly with this recipe. Thanks so much for posting it diva!
Dear Monique! This recipe is extremely addictive and I have had it 3 days in a row since this past Saturday. I added Vanilla Extract to the cinnamon spread, and all and all it was still so good! Keep it coming!

Girl, oh, girl! My 11 year old daughter and I cooked this this morning (Veteran’s Day) as a treat since we don’t eat together often and let me tell you… You put your foot all in that!!!! This is the first recipe of yours we’ve tried, but if they all taste this good, it will NOT be the last!
I’m p.o’ d! My boys totally did not appreciate these today! They were delish and beautiful but they said ‘too sweet’ and only at half a stack. (these men can smash 4 cinnamon rolls each for breakfast!) I loved the way they looked and tasted so it just shows that my men have bad taste!
LOL thanks for trying them out! They are sweet. My hubby likes them but he usually eats half the stack (stack of 6) and save the rest for later. It doesn’t taste as sweet on french toast.
