Usually, I celebrate New Year’s with just my hubs and kids. I make the traditional collard greens and black-eyed peas, and we have a small family dinner and discuss our family goals and vacations for the new year.

But this year, I’m having a New Years’ Eve slumber party with my girl cousins! We’ve never brought in the New Year together, so we are all excited and ready for some crazy girl time. It will be a throwback to the epic sleepovers we use to have growing up at grandma Barb’s house.

What’s on the menu? APPETIZERS, desserts, and LOTS of cocktails!!

One appetizer I’m looking forward to making are these buffalo chicken meatballs. If you are a buffalo chicken fan, you’re probably going to find it hard to stop eating these things! They are that good! Even my kids love these buffalo chicken meatballs and they aren’t really into hot and spicy foods yet! Doubling the recipe is a good idea if you’re entertaining a big crowd. Folks can never seem to resist trying them, and they go fast!

What to serve with buffalo chicken meatballs?

Three things…celery sticks, baby carrots, and blue cheese dressing for dipping or drizzling! It’s just the perfect pairing. I usually leave the blue cheese dressing on the side since some people aren’t fans. But it does look so pretty drizzled on them.

What hot sauce should I use?

My favorite hot sauce is Cholula, but for these meatballs, I prefer the slow heat of Franks Red Hot original hot sauce.. I think it has the right balance of spice and vinegar. I still add a bit more spices to it, though.

How to serve these buffalo chicken meatballs?

I like to arrange them individually on a platter with toothpicks already inserted and ready to devour. Garnish with fresh parsley for a beautiful pop of color. You can also place them in a large bowl or small crockpot and provide the toothpicks if you are feeeding a large crowd.

Ingredients
 

MEATBALLS

  • 1 tablespoon unsalted butter
  • 2 tablespoons celery, finely diced
  • 2 tablespoons white onion, finely diced
  • 1 egg
  • 3 tablespoons mayonnaise
  • 1 tablespoon Franks Red Hot Original Hot Sauce
  • 1/2 teaspoon sea salt or seasoning salt
  • 1 tablespoons parsley
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2-3/4 cup toasted breadcrumbs
  • 1 lb. ground chicken

BUFFLAO SAUCE

  • 1/2 cup Franks Red Hot Original Hot Sauce
  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon parsley
  • 1/4 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon cayenne pepper

Garnish & Dip

  • parsley, garnish
  • blue cheese dressing, for dipping
  • celery and carrot sticks

Instructions
 

  • In a saucepan, melt butter over medium heat.
  • Add diced celery and onions and saute until tender.
  • Place cooked celery and onions in a large bowl and allow to cool.
  • Stir in egg, mayo, hot sauce,salt, parsely, cayenne pepper, garlic powder and paprika until well combined.
  • Stir in breadcrumbs.
  • Stir in ground chicken until well incorporated.
  • Cover and chill mixture for 30-60 minutes.
  • When ready to prepare, using a small cookie scoop (1 tablespoon size), scoop out the mixture and roll into a ball with wet hands. (Wet hands will keep it from sticking to your hands)
  • Place meatballs on a cookie sheet lined with parchment paper.
  • Bake in preheated 400 F. oven for 10-12 minutes.
  • To make the sauce, combine all sauce ingredients in a large bowl.
  • Toss meatballs in the sauce until they are well coated, reserving the leftover sauce.
  • Place the meatballs back on the lined cookie sheet and broil for 1-2 minutes just until the sauce has baked onto the meatballs (watch it carefully since broiling is super quick)
  • Toss the meatballs in remaining sauce.
  • Place meatballs on a platter and insert toothpicks.
  • Garnish with fresh parsley
  • Serve warm with blue cheese dressing and celery and carrot sticks.

Notes

Heating: If preferred you can keep the meatballs warm in a crockpot.
Serve with blue cheese dressing for a dipping sauce.
