MEATBALLS
1 tablespoonunsalted butter
2tablespoonsceleryfinely diced

3 tablespoonsmayonnaise
1tablespoonFranks Red Hot Original Hot Sauce
1/2teaspoonsea salt or seasoning salt
1tablespoonsparsley
1/4teaspooncayenne pepper
1/4 teaspoongarlic powder
1/2 teaspoonpaprika
1/2-3/4 cuptoasted breadcrumbs
1lb.ground chicken
BUFFLAO SAUCE
1/2cup Franks Red Hot Original Hot Sauce
1tablespoonunsalted buttermelted
1/2 teaspoonparsley
1/4teaspoongarlic powder
1teaspoonWorcestershire sauce
1/4 teaspooncayenne pepper

Instructions
In a saucepan, melt butter over medium heat.
Add diced celery and onions and saute until tender.
Place cooked celery and onions in a large bowl and allow to cool.
Stir in egg, mayo, hot sauce,salt, parsely, cayenne pepper, garlic powder and paprika until well combined.
Stir in breadcrumbs.
Stir in ground chicken until well incorporated.
Cover and chill mixture for 30-60 minutes.
When ready to prepare, using a small cookie scoop (1 tablespoon size), scoop out the mixture and roll into a ball with wet hands. (Wet hands will keep it from sticking to your hands)
Place meatballs on a cookie sheet lined with parchment paper.
Bake in preheated 400 F. oven for 10-12 minutes.
To make the sauce, combine all sauce ingredients in a large bowl.
Toss meatballs in the sauce until they are well coated, reserving the leftover sauce.
Place the meatballs back on the lined cookie sheet and broil for 1-2 minutes just until the sauce has baked onto the meatballs (watch it carefully since broiling is super quick)
Toss the meatballs in remaining sauce.
Place meatballs on a platter and insert toothpicks.
Garnish with fresh parsley
Serve warm with blue cheese dressing and celery and carrot sticks.
Notes
Heating: If preferred you can keep the meatballs warm in a crockpot.Serve with blue cheese dressing for a dipping sauce.
