This ice cream sandwich cake is really starting to become my favorite last minute, crowd pleasing dessert. It’s super fast to whip together, no baking, and people LOVE IT! It’s always one of the first desserts to go, which to me, is a good sign of a winner.

It’s pretty freakin ridiculous how easy this ice cream sandwich cake is to make. Ice cream sandwiches, caramel, fudge, peanuts, and BAM, you’re  all set!

You can certainly switch up the toppings and add crushed oreos, candy bars like Snickers, heath bits, or even change the ice cream sandwich flavor. I’ve tried many versions but I always come back to regular ol ice cream sandwiches and plain peanut, it’s just a classic and it works!

We call it Snickers Ice Cream Sandwich cake because it taste like those frozen snicker ice cream bars you get at the store. I love those things.

How many ice cream sandwiches to use??? The number of ice cream sandwiches you’ll need depends on your pan size. (this looks really nice in a loaf pan btw) My dish was probably about 8×10 and I used 12 ice cream sandwiches but really needed about 14 to fill in all the gaps. Whatever pan you use you’ll  probably still need to cut  a few ice cream sandwiches lengthwise or widthwise to fill in the gaps. Also make sure your pan is deep enough for at least two layers (about  3-4 inches deep is best for 2 layers, more if you plan on making a ton of layers.

Ingredients
 

  • About 14 ice cream sandwiches, 8 x 10 dish
  • Fudge spread
  • Caramel topping
  • Cool Whip
  • Peanuts, or any other kind of nuts, crushed candy or crushed cookies
  • Chocolate syrup

Instructions
 

  • Place a layer of ice cream sandwiches in the bottom of the dish.
  • Spread on a layer of fudge.
  • Sprinkle with peanuts and drizzle with caramel topping.
  • Add on another layer of ice cream sandwiches
  • Spread on a layer of fudge.
  • Top with cool whip
  • Sprinkle with peanuts
  • Drizzle on caramel and chocolate syrup.
  • Freeze for 3 hours.
  • Slice into squares and serve!

Notes

~Different Versions~
I've made a strawberry shortcake version with cool whip, diced fresh strawberries and vanilla ice cream sandwiches that was really good. Also the birthday cake flavored ice cream sandwiches is really good with whipped buttercream frosting, cool whip, rushed vanilla wafers and sprinkles.
