I am a sucker for creating family traditions so when I recieved this package and was told to have a “family taco night” I was all over it!!! I love this idea! Well, actually I love any type of family tradition that involves FOOD!! As soon as I got this package I made taco pasta shells that evening since it was on a Friday (video recipe coming this week) I’d been wanting to try this recipe for so long. Well they turned out omg fabulous! Yep, the recipe went into my book of “make again” dinners. Even my mexican food loving husband said “why have you been keeping these from me for so long!?” It was our first time having taco night but we will definitely be doing it often.

We always have mexican nite. Living in San Diego we often enjoy the authentic taste in smell restaurants but when we do it at home my kiddies opt for chicken enchiladas and spanish rice
I love mexican food, since my background is Central America, I'm familiar with the different mexican dishes. One of my fav dishes is making my taco meat enchiladas, with a side of refried beans, spanish rice and sour cream. Ground turkey prepare with onions, bell peppers, garlic, taco mix, wrap in corn tortillas. The sauce is enchilada sauce and pace picante salsa mix together, pour over tortilla and sprinkle with cheese in a hot oven till melted. Top each serving with crumble corn chip and sour cream! Yum Yum
My family loves my home cooked taco dinner! I season my ground beef with lightly browned onions, green and orange peppers, along with fresh garlic. Then I cut up fresh tomatoes and lettuce. I am a stickler for cheese, so I use a variety of mexican flavored shredded cheeses. Next I toast the taco shells so that they have a nice crunch to them. My daughter prefers tortilla chips so that she can make a taco salad. Hey to each their own! Last but not least, I add the topper, Pacante Sauce and wala!!! Taco night is completed!!!!!

We love to eat 7 layer dip with tortilla chips! A lil lettuce, lil cheese, refried beans, sour cream etc etc. Its so filling that we no longer eat it as an appetizer but as the main course! YUM =)
My mama is famously known in the family (especially her brother-in-law) for her tacos! Whenever my uncle comes to visit, he always requests my mama to make her tacos. I admit she throws down on those tacos and they're first-come-first-serve because if u get in the kitchen too late, u probably going to miss the tacos…as they will be ALL GONE!! lol
