Cheesy Chicken Spaghetti
Creamy, cheesy chicken spaghetti! Made with real ingredients! Quick and easy dinner idea!
cheese, chicken, spaghetti
seasoned chicken breast
chopped & cooked (see note)
cooked al dente according to packaged
red bell pepper, diced
(about ½ red bell pepper)
celery, finely diced
(about 3 celery sticks)
white onion, diced
(about ½ small onion)
heavy whipping cream
canned diced tomatoes
sharp cheddar cheese, shredded
(can use a variety of cheeses)
salt, black pepper, garlic powder & onion powder
diced fresh tomatoes
(optional but so good!)
In a large deep skillet, melt butter over medium heat.
Add red bell pepper, celery and onions and cook until tender.
Stir in garlic and cook until fragrant.
Stir in flour and cook for 2-3 minutes. (to cook out the raw flour taste. Add more butter if needed)
Pour in chicken broth and continue simmering for 2 minutes.
Pour in heavy cream.
Add Italian seasoning, basil and parsley.
Stir in diced tomatoes.
Simmer sauce for 10 minutes.
Add in cooked chicken and cheese, stirring until cheese is melted.
Add al dente pasta and toss to coat.
Taste and season generously with sea salt (or seasoning salt), black pepper, garlic powder and onion powder to bring out the flavors of the fresh ingredients.
Plate and garnish with fresh tomatoes, Parmesan cheese and parsely. If desired.
Seasoned chicken: I seasoned my chicken before cooking generously with salt, black pepper and garlic powder. *Cook chicken in a cast iron or stainless steel skillet to get a nice golden crust.
