2cupsseasoned chicken breastchopped & cooked (see note)
8oz spaghetticooked al dente according to packaged
5tablespoonsunsalted butterchopped
⅔ cups red bell pepper, diced(about ½ red bell pepper)
⅔cupcelery, finely diced(about 3 celery sticks)
⅔cupwhite onion, diced(about ½ small onion)
2-3 teaspoonsgarlic, minced
¼cupall-purpose flour
1cupchicken broth
1cupheavy whipping cream
1teaspoonItalian seasoning
1 teaspoonparsley
1 teaspoon basil
14ozcanned diced tomatoes
2½cupssharp cheddar cheese, shredded(can use a variety of cheeses)
salt, black pepper, garlic powder & onion powderto season
Garnished
diced fresh tomatoes
Parmesan cheese(optional but so good!)
fresh parsley
Instructions
In a large deep skillet, melt butter over medium heat.
Add red bell pepper, celery, and onions and cook until tender.
Stir in garlic and cook until fragrant.
Stir in flour and cook for 2-3 minutes. (to cook out the raw flour taste. Add more butter if needed)
Pour in chicken broth and continue simmering for 2 minutes.
Pour in heavy cream.
Add Italian seasoning, basil, and parsley.
Stir in diced tomatoes.
Simmer sauce for 10 minutes.
Add in cooked chicken and cheese, stirring until cheese is melted.
Add al dente pasta and toss to coat.
Taste and season generously with sea salt (or seasoning salt), black pepper, garlic powder, and onion powder to bring out the flavors of the fresh ingredients.
Plate and garnish with fresh tomatoes, Parmesan cheese, and parsley. If desired.

Seasoned chicken: I cut and season my chicken before cooking generously with salt, black pepper, and garlic powder. *Cook chicken in a cast iron or stainless steel skillet to get a nice golden crust.
