1.5lbsboneless skinless chicken thighs
1cupfresh salsa (use your favorite kind)
1packettaco seasonings mix (1 oz size packet)
6taco shells

shredded lettuce
shredded cheese
diced tomatoes
sour cream
guacamole
diced red onions
GARNISH
fresh lime juice
fresh cilantro or parsley
Instructions
In a large bowl, stir together salsa and taco seasoning until well combined.
Pour mixture into crock pot.
Add the chicken thighs, toss them in the mixture front and back, and place them in a single layer if possible.
Cover and cook on high for 2 hours (I've tried this on low for 4 hours, but I swear they seem less tender this way. Strange, I know.)
When ready to serve, remove chicken from the crock pot and shred (chicken will be very tender and will practically shred itself.)
Taste and season with any additional seasonings if desired. If extra salsa is in the crock pot, you can mix some into the chicken if desired. (Depending on the flavor of your salsa, you may have to add a bit of salt or other spices to suit your taste)
Drizzle chicken with fresh lime juice and sprinkle with fresh chopped cilantro if desired.
