Vegetable Garden Spaghetti Made With Spaghetti Squash

Ingredients
1spaghetti squash
1cupof water
1jar spaghetti sauceI use Prego Chunky Garden 1 cup baby spinach leaves, chopped
1/2green bell pepperchopped
1carrot or several sweet baby carrotshredded 1/2 zucchini, chopped
1/2small onion
1/2c.frozen peas
1/2Tablespoonparsley
1/2Tablespoonoregano
Instructions
) Preheat oven to 350
) Cut the squash in half and scrape out the seeds.
) Place in a casserole dish, cut side down and pour in water.
) Steam in the oven for about an hour.
) Add spaghetti sauce into a saucepan.
) Add in the vegetables.
) Cook over medium high heat.
) Bring to a boil then simmer to about an hour until vegetables are tender.
) Stir in parsley and oregano.
)Adjust seasonings. Add salt and pepper if desired.
)Remove from heat.
)Remove squash from the oven and let it cool off.
)Scrape squash into a bowl or casserole dish using a fork.
)To serve, place the squash on a plate and top with spaghetti sauce. 15.) Sprinkle on parmesan cheese if desired.

*note* you can use any kind of veggies you want. I just added what I had in my refrigerator. You can also cook spaghetti squash in the microwave if you are in a rush. Cook time will depend on how large your squash is. I sometimes like to add smoked turkey dinner sausage & parmesan cheese to this. Sooo good and filling!
