Autumn Breakfast Burrito

Breakfast buritto filled with sausage, eggs, peppers and sweet potatoes! Rustic and filling!

Ingredients

  • 1 medium sweet potato cut into 1/4 inch cubes
  • 1/2 green bell pepper seeded and cut into 1/4 inch cubes
  • 1/4 large white onion cut into tiny pieces
  • 9.6 oz. Johnsonville Fully Cooked Smoked Turkey Sausage Links or Johnsonville Turkey Fully Cooked Breakfast Sausage cut into small pieces
  • 7 eggs scrambled
  • 5 burrito-size tortillas white or wheat
  • Mild cheddar cheese shredded
  • Fresh baby spinach shredded

Instructions

  • Preheat oven to 425. F
  • Drizzle sweet potato, green bell pepper and onion lightly with olive oil.
  • Place on a greased cookie sheet in a single layer.
  • Bake for 18-20 minutes.
  • Add in sausage during the last 5 minutes to heat it.
  • Generously grease a griddle with butter over low heat.
  • Place tortilla on griddle.
  • Sprinkle cheese over the entire surface of the tortilla and allow to melt slowly.
  • Sprinkle shredded spinach on top and allow to wilt slightly. (keep the heat low, the tortilla should not be browning or getting crisp.)
  • Add a layer of scrambled eggs down the center (leave enough room on the bottom and top to fold burrito style)
  • Add the sweet potato sausage mixture on top of the eggs.
  • Transfer burrito to a cutting board or plate and roll up burrito-syle. Place seam side down.
  • Cut at a diagonal and serve.
