lb
ground mild breakfast sausage
1/2
cup
onions
diced
1
teaspoon
garlic minced

eggs

whole milk
1/4
cup
sour cream

teaspoon
chives

mild cheddar cheese
shredded (divided)
salt & pepper

frozen tater tots
I use extra crispy

red bell peppers
1/2
cup
green bell peppers

bacon
prepared and chopped.
Instructions
Preheat oven to 350 F.
In a large skillet over medium heat, brown ground sausage until cooked.
Drain off the fat, reserving about 2 tablespoons of fat.
Remove sausage from pan and set aside.
Add reserved fat to the pan.
Add in onions and cook until tender.
Add garlic and cook until fragrant.
Set aside.
In a large bowl beat eggs, milk, sour cream, and chives.
Stir in 1 cup of shredded cheese.
Add a light sprinkling of salt and pepper ( I don't need much since my sausage is a bit salty)
Pour egg mixture into a 9x13 inch glass casserole dish.
Place tater tots in rows in the casserole dish.
Add an even layer of the sausage.
Sprinkle on remaining cheese.
Sprinkle with red bell peppers, green bell peppers, and bacon.
Cover with foil and back for 45 minutes or until the center is almost set.
Remove foil and cook until cheese is completely melted.
Remove from oven and let cool, the center will set completely as it cools.
Serve hot.
