Ingredients

all-purpose flour
1/3
cup
granulated sugar

brown sugar
packed

teaspoon
baking powder
salt

cinnamon

vanilla extract

unsalted butter
melted
1
egg
slightly beaten
1/3
cup
+ 2 Tablespoons milk
1 1/2

finely diced apples
I used 1 medium granny smith and 1 medium gala apple
GLAZE
1
cup
powdered sugar
2
tablespoons
milk
may need more
1/4
vanilla extract
Canola oil
for frying
Instructions
In a large bowl, whisk together flour, white sugar, brown sugar, baking powder, salt and cinnamon.
Make a well in the center of bowl .
Add in milk, butter, egg and vanilla.
Stir just until combined.
Gently fold in apples.
Heat oil in large frying pan to about 350 F. (may need to adjust)
Use a mini ice cream scoop to scoop out balls of dough and drop them into the hot oil.
Cook for about 1 ½ -2 minutes or until golden brown. Flip and let the other side brown for about a minute or until brown.
Remove fritters from oil with a slotted spoon and place on paper towels to drain.
Mix together powdered sugar, milk and vanilla to create the glaze.
Dip each doughnut bite into the glaze, covering completely. Let excess glaze drip off.
Place on a wire rack over wax paper and let sit until glaze has hardened.
