Roasted Chicken Bites

boneless chicken thighs

extra virgin olive oil

smoked paprika

garlic powder

onion powder

smoked salt
can use a bit more if you prefer things a bit salty
Liquid smoke

honey
1
teaspoon
worcestershire sauce

apple cider vinegar
Instructions
Cut chicken thighs into bite sized pieces.
Toss chicken in olive oil until pieces are lightly coated.
Mix together the spices.
Sprinkle spices generously over chicken until well coated. (I never use all of this mixture)
Place chicken in a plastic bag and let marinate in the fridge for 3 hours or overnight. (I've gotten away with only 1 hour but the longer the better)
Arrange chicken bites on a grill pan.
Sprinkle with liquid smoke.
Preheat oven to 425 F.
Mix together honey, worcestershire sauce and apple cider vinegar.
Brush mixture over chicken.
Roast for 5 minutes.
Brush again with honey mixture.
Roast for another 5-7 minutes and brush again with honey mixture.
Turn the oven to broil and broil for a few minutes until chicken is done and the honey has caramelized a bit. (keep a close eye on it)
Serve.
