Add cooled cake to a large mixing bowl or pan and crumble it into fine crumbs.
Chocolate Cake
Stir in frosting by the tablespoon a little at a time until the cake mixture is moist but can hold a firm ball shape when packed and rolled into a ball. (Use your gloved hands to incorporate the frosting into the cake crumbs. I only needed a few spoons of frosting since my cake was already so moist.)
Chocolate Frosting
Using a mini ice cream scoop, scoop out two scoops worth of cake mixture.
Roll the mixture into a tight ball and place it on a plate. Repeat until all the cake mixture has been rolled into balls.
Melt 2-4 ounces of chocolate or candy melts in a microwave-safe bowl, according to the package.
8 oz Premium chocolate or candy melts, divided
Dip the tip of the cake pop sticks into the melted chocolate or candy melt and insert into the cake balls about halfway.

Freeze for about 20 minutes.
Melt the remaining chocolate or candy melts according to the package and pour into a tall cup. (Make sure you have enough to submerge the cake ball completely)
Remove cake balls from the freezer.
Dip cake balls carefully into the melted chocolate/candy melt until completely covered, ( and then let excess drip off. (swirl and tap gently if needed)
Add the sprinkles while the coating is still wet. It will harden quickly.

Stick the decorated cake pop into a styrofoam block or cake pop holder until the coating has hardened. (Place into the fridge to speed up setting time if desired)
Cover with a clear treat bag & ribbon for gift-giving, if desired.
If not serving the same day, store individually bagged cake pops in a single layer in an air-tight container in the fridge. Serve cold or let it come to room temperature.

~TIPS~ Want to use food coloring? I'd suggest using candy melts instead of white chocolate for the coating. I wasn't impressed with how the white chocolate took the food coloring. It made the chocolate thicker. I purchased all of my ingredients, including the cake pop sticks and sprinkles, at Target. I had the styrofoam already, but you can get a block of styrofoam at crafts stores or Walmart. The recipe (using only 1/2 of a 9 X 13 cake) and makes about 13 medium-sized cake balls.
