Cake
1/2cupbrown sugarpacked
1/2cupgranulated sugar
1/2cupbutterroom temperature
2eggs
1teaspoonvanilla extract
1 ½cupsall-purpose floursifted
1teaspoonbaking powder
1/4teaspoonsalt
1/2cupbuttermilk or whole milk
Cream Cheese Layer
1cupheavy whipping cream
3/4cuppowdered sugardivided
1teaspoonvanilla extract
8ozcream cheeseroom temperature
Pineapple Topping
1tablespoonbutter
4cupsfresh pineapple chunks
1/2cupbrown sugar
1/2teaspooncinnamon
Instructions
Preheat oven to 350. F.
Grease and lightly flour a 9x13 inch glass baking dish. Set aside.
In a large bowl cream together brown sugar, granulated sugar, and butter.
Mix in eggs and vanilla extract.
Mix in flour, baking powder, and salt alternating with milk until well combined.
Spread batter into an even layer in prepared baking dish.
Bake for 18 minutes (check on it at the 16-minute mark, this cake is very thin and doesn't need long)
Let cool completely.
Meanwhile to create the cream layer, add heavy whipping cream to a large bowl.
Add in 1/4 cup of powdered and vanilla extract.
Mix until soft peak form. Set aside.
In a medium bowl, mix together cream cheese and 1/2 cup powdered sugar until creamy.
Add whipped cream mixture into cream cheese mixture until well combined.
Spread onto of cooled cake.
Cover cake and refrigerate for 3 hours.
To make the grilled pineapples, add butter to heated grill pan. (see grilling instructions in notes)
In a large bowl, add diced pineapples.
Toss with brown sugar and cinnamon.
Place pineapple in hot pan and cook until both sides are lightly caramelized.
When ready to serve, plate cake bars individually and top with pineapple.

To make on the grill: Dice fresh pineapple into rings.Dip each ring into cinnamon-brown sugar. Place on a grill mat until sugar has caramelized and the pineapple has beautiful grill marks.
