Ingredients

light brown sugar

creamy peanut butter

raw honey
solid form

vanilla extract

Krispy rice cereal

shredded coconut
can replace with equal amount oats or cereal

mini chocolate chips

Instructions
Line a 8 x 8 pan with parchment paper. Set aside.
In a large bowl add butter, brown sugar, peanut butter, honey and vanilla extract. Set aside.
In another large bowl, stir together rice cereal, oats, coconut and mini chocolate chips.
Combine the dry ingredients into the wet ingredients until well coated.
Spread mixture evenly into prepared pan and press down until the mixture is packed super tight (Very important. It MUST be packed tight)
Place in the fridge for 1 hour. (We cheat and do 30 minutes)
When bars are set, cut into small bars (fun sized bars are easier to dip)
Melt chocolate almond bark in a bowl according to package.
Carefully submerge granola bar into the melted chocolate and gently lift, allowing excess chocolate to drip off.
Place on a sheet of parchement paper and repeat until all granola bars have been dipped.
Store in airtight container. (I prefer to keep in the fridge.)
