This week hasn’t been one of my favorites. I was ALMOST  in a bad accident with my kids in the car, which kept replaying in my mind all week, coupled with a few other annoying things.  I was so looking forward to a relaxing weekend but then Saturday morning I wake up to find my little 13-year old chihuahua Cookie had died. And now here it is Sunday and I can feel the start of my annual 2-week long allergy attack that I thought I was gonna avoid this summer. Booooooo to all of that, just booooooo!

You know, it’s crazy  how you don’t realize (or maybe some people do) how much of a huge role a long-term pet plays in your life. I mean like….they are so interwoven ya know. I’ve taken care of this little girl for 14 years and it feels so odd to not have her around. We got her after we got married 15 years ago and she was our practice baby. Even Isaac’s first word was “Tuttie”. Back in 2005, I had a successful pet clothing store and Cookie was the model for thousands, yes thousands of custom-made pet clothes. We’ve had a lot of fun together.  Gosh, I’m sure gonna miss that lil 5 lb. girl who thought she was the size of a lion.

I’m usually one who can quickly find the silver-lining and gratitude in any situation but today I’m NOT choosing to do that. Nope, I simply want to sulk for a day, eat trashy food and lounge around doing nothing. And you know what…sometimes you just gotta give yourself some grace without guilt. Right?

So to kick off some trashy eating in remembrance of Cookie… oh who am I kidding, I don’t need a reason to eat trash I’m grown! But let’s naturally start with dessert!!! For some reason when I want to really give my diet the middle finger, brownies usually come to mind. But not just any brownies. I’m talking these ultra fudgy, ultra gooey, ultra chocolatey brownies!!

They. Are. Sinful.

The perfect dessert to drown your sorrows in. Ha, just joking,  I’m not that far gone people I promise. But sinking your teeth into these babies sure makes you feel like you’re giving yourself a little blessing! These ultra fudgy brownies are pretty insane. They are so gooey, yet firm. The closest thing to eating brownie batter that’s for sure!

These ARE NOT for the people who prefer chewy, fluffy brownies that leave your fingers clean. No, ma’am! These brownies are dense and heavy and you’ll want milk! I mean just look at those little diet crashers waiting for me to devour them while I watch back to back episodes of reality garbage in my super comfy pj’s! I just love all the little wrinkles on top!

You can dress the tops up any way you’d like! I had some mini baking m&m’s on hand and a Hershey’s chocolate bar so that’s what I use. I really like how the Hershey bar keeps it shape when pressed into something yummy. Looks really cool paired with those bright and happy M&M’s doesn’t it?

The hardest part about making these brownies is that they LOVE to fool you in the oven! These brownies HAVE to be set in the fridge to get that ultra fudgy texture! Which means when they come out of the oven they will still look undone. Don’t be alarmed. Seriously. And don’t put them back in the oven!  Let them cool in the pan until warm. Then place them in the fridge for about an hour until brownies are firm enough to slice while retaining their shape.

 

 

I know it sucks to have to wait an hour but they really are worth it and hey at least it’s a one bowl recipe! Winning!!

Soft, gooey & fudgy homemade brownies loaded with chocolate. Easy one-bowl recipe.

Cook Time: 30 minutes
Total Time: 45 minutes
Servings: 8 people

Ingredients
 

  • 1/2 cup butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 eggs
  • 1 teaspoon vanilla extract, optional
  • 1/2 cups semi-sweet chocolate chips, melted according to package
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder, sifted
  • 1/2 teaspoon salt
  • mini baking m&m's
  • Hershey's chocolate bar

Instructions
 

  • Preheat oven to 325 F.
  • Line an 8 x 8 glass pan with parchment paper. Set aside.
  • In a large bowl combine butter and sugars
  • Mix in eggs and vanilla extract.
  • Mix in melted chocolate.
  • Mix in flour, cocoa powder, and salt until well combined.
  • Pour batter into prepared pan and spread evenly.
  • Top with m&m's and Hershey bar pieces (if desired)
  • Bake for 30- 35 minutes (may need slightly longer) *see note
  • Remove from oven and let sit in pan until warm.
  • Place in the fridge to set for about 1 hour or until it is firm enough to hold its shape once cut.
  • Store between layers of parchment to prevent sticking to each other, in an airtight container.

Notes

These brownies HAVE to be set in the fridge. They are done when a toothpick comes out with only a little bit of batter on it. They will still look undone if you cut them but will set in the fridge.
