I love going to visit my grandmother in the mountains. She’s such great company and her cooking is nothing short of a blessing. The last time I stopped in for a visit she made a HUGE brunch for us. We were just passing through but she insisted, as always, that we allow her to cook us something to eat. The only answer to that is, “Sure mama if you insist” : )
She went into the kitchen and I kid you not, no less than 20 minutes later we sat down to the best homemade buttermilk pancakes, scratch-made maple syrup, homemade breakfast sausage, fluffy scrambled eggs, southern grits, crispy hash browns, and a huge bowl of chilled diced melons. It was a gorgeous spread!
How does she do it??!?? You can’t even get this kinda speedy service at a restaurant. We always joke about her having little elves in the kitchen helping because she whips up homemade meals so fast.
Everything was delicious especially those doggone pancakes and syrup!! She insisted that it was just her normal buttermilk pancake recipe except she ran out of buttermilk and had to use half whole milk and then she added a bit extra vanilla extract and brushed them with butter while they were on the griddle. I guess that made all the difference!
The homemade pancake syrup really took these fluffy, light buttermilk pancakes to the next level. Man, that syrup is good!!! So buttery and sweet with the perfect amount of old-fashioned maple flavor. I have that recipe coming up!
In her generous fashion she quickly wrote out the recipe for me and I’ve been making them non-stop it seems. My boys are currently in a pancake fanatic stage and Ethan has been requesting them for dinner.
I really think I like these homemade buttermilk pancakes better than my other favorite pancake recipe. I guess one can never have too many favorite pancake recipes huh?
Although these buttermilk pancakes are light and fluffy, they are not too delicate to hold up to a good drizzling of hot syrup! Not to mention they are really easy to make and I usually have everything on hand.
Be sure to serve these bad boys piping hot, fresh off the griddle!

Homemade Buttermilk Pancakes
Ingredients
- 2 cups all-purpose flour sifted
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 tablespoons sugar
- 2 eggs
- 1 cup warm buttermilk
- 1 cup warm whole milk
- 1/4 cup real butter melted
- 1 teaspoon vanilla extract
Instructions
- In a large bowl sift together flour, baking powder, salt,baking soda and sugar. Set aside.
- In a medium bowl beat eggs until fluffy and uniform in color.
- Whisk in buttermilk and whole milk.
- Stir in melted butter and vanilla extract.
- Make a well in the center of the dry ingredients.
- Pour the wet mixture into the well.
- Gently add the dry ingredients into the well and stir until flour is incorporated. (Be very careful here and do not over stir. Batter should be lumpy.)
- Heat a nonstick griddle to 350 F. (This is the standard tempt. but griddles seem to heat differently. I have to heat mine to 300 F. It may be best to do a test pancake first to test out what is the best temp for your griddle)
- Place 1/3 cup worth of pancake batter onto the hot griddle. (I spread the batter out a little as I'm pouring it on since the batter is thick if it has sat for a while.)
- Cook pancakes until bubbles break on the surface and then flip them over and cook the other side until golden. (see note)
- Spread melted butter on top of each pancake and place in a stack.
- Serve hot with syrup and whipped butter.

If your pancakes are golden or brown on the underside before bubbles begin to break on the surface then your heat is too high.
These are THE BEST pancakes I have ever made…still patiently waiting on your cookbook to drop so that I can support. I CONSTANTLY use your recipes, not just on holidays. I added 2 Tbl of brown sugar and 2 Tbl of PB2 since I wanted to try out some peanut butter pancakes. Top with peanut butter, syrup, and bananas or peanut butter and jelly! They were amazingly fluffy and soft. Your recipes are definitely tried and true. Thank you for helping me get the staples right in the kitchen.

My battery was too soupy. I was thinking may 1 cup of milk instead of two. Then again, I used soy free almond milk. I wonder if that made a difference in texture

Use the brown rice instead of chickpea. Brown rice is excellent for use on sweets or recipes of sweetness. Chickpea use is for general baking.

I made these today for my nieces and myself. I over mixed them so they came out flat but i actually loved them that way. I added chocolate chips to my nieces servings and they loved them. I DID have to add more sugar though. About 1/4 or 1/8 of a cup (i can’t remember) extra. I will FOR SURE make again.

I made this for my “3” son’s this morning. YUMMM!!! This recipe is similar to the one I make, however, I never thought of warming up the milk! I believe that, made the difference in the batter. I added blueberries generously to this recipe, after the pancakes were cooking, and they were so good that I didn’t even add maple syrup, although I live in Vt., and we have delicious syrup.

These were amazing, absolutely amazing. I added a 4 chocolate chips in each pancake as a twist. I also didn’t have whole milk, i had 2% and they worked just as fine! This is the 3rd recipe i tried from your recipe index (carrot cake with cream cheese icing, Southern buttermilk biscuits and now the buttermilk pancakes), and so far nothing has failed. I just made these pancakes today for the first time, and they are so delicious! My daughter said these are the best pancakes I ever made, and I agree. Who knew—buttermilk and regular milk? I think that’s what makes the difference with these pancakes. Great job with this recipe; although, now I have to worry about all the weight I will from making them too often.
Tasted ok. Was wanting a nice, fluffy pancake, but ended up with very, very thin pancakes. If you’re wanting fluffy pancakes, look elsewhere.

This was a great recipe! I did one and a half of the recipe so instead of 2 c of flour I did 3, instead of 2 tsp of baking powder I did 3 and so on. I also didn’t have buttermilk so substituted with vinegar and milk mixture (1 tbsp white vinegar in measuring cup and fill to a cup with whole milk, then let sit for 5 min to curtal a bit.) I did two cups of the buttermilk sub. and one cup of reg. whole milk. It turned out GREAT!! I will definitely be keeping this recipe.

Hi Carolyn. It made about eight for me, and mine were big too–a little bigger than in the pictures. Try it, because you can always save the batter if it’s too much for you. If it’s not enough, they are so good that you will want to make more.

These were too runny. Which made for a VERY thin pancake. The liquid & dry ingredients were the same measurement but I think the liquid should’ve been less by @ least half.

I made these for breakfast this morning, using White Lily flour that I bought when visiting family in Virginia, and oh my word, best pancakes in the world!!! I did have to add about a 1/2 cup more of flour, and I halved your recipe since it’s just my husband and me, but even my husband who is not that into food period, he just wants his belly full at the extreme point of hungry, said they were the best pancakes he’s ever had…. This recipe is amazing! We now have Pancake Sundays in my household featuring these beauties ???? I actually make my own buttermilk because its too expensive to buy. I measure 4 tsp lemon juice into a coffee cup. I heat 1 cup milk for 30 seconds in a separate coffee cup. Then I pour the milk into the lemon juice. It spoils immediately. I stir it up and set it aside until its time to use it!
Great recipe – and so fluffy! I was too lazy to sift the dry ingredients, and I only had 2% milk on hand, so I can only imagine how decadent they’ll be when I sift and add whole milk. Husband, 3 year old son and I loved them – thank you!

I used self rising flour instead of the baking soda and baking powder and I didn’t have any whole milk so I used what I had on hand which was Silk Cashew milk and they turned out wonderful. Since I made this recipe for myself, I refrigerated the leftover batter to use again the next day and they came out perfect. There was no need to butter the outside because of the addition of the melted butter in the batter. Breakfast was excellent with a side of bacon and apple juice. This was very good. I always tried to make pancakes and was always unsuccessful. The only problem I had was regulating my temp, it was either to hot or not hot enough. I’m going to buy a griddle and see if this helps me out. I was using an iron cast skillet. But over all they were tasty. Thanks
