Buffalo Chicken Roll-Ups
Serves: 3 rolls
  • 1 cup shredded chicken, cooked
  • 1 tablespoon butter, melted
  • 2 tablespoon buffalo sauce (I used Franks)
  • ¼ teaspoon garlic powder
  • 1.2 teaspoon parsley
  • ⅛ teaspoon black pepper
  • ½ cup mozzerella cheese (can use more)
  • 3 flour tortillas (8 inch)
  • Ranch or blue cheese dressing, of dipping
  1. In a small bowl stir together butter, buffalo sauce, garlic powder, parsley and black pepper.
  2. Place shredded chicken in a large bowl and pour buffalo sauce mixture over chicken.
  3. Stir to combine. (add more seasonings if desired)
  4. Heat 1 tablespoon of butter or oil in a large skillet over medium.
  5. Prepare the rolls by placing a line of mozzarella cheese toward the end of the tortillas.
  6. Top the cheese with a line of the buffalo chicken.
  7. Roll each tortilla tightly.
  8. Place rolls into the hot skillet, seam side down and cook until golden and toasted. (Be sure to turn so that each side gets crisp).
  9. Place rolls on a plate and slice at a diagonal.
  10. Serve with ranch or blue cheese dressing for dipping.
