Old Fashioned Peanut Butter Oatmeal No-Bake Cookies
  • 4 tablespoons butter, chopped
  • 2 cups white sugar
  • 1 cup warm whole milk, divided
  • ⅛ teaspoon cream of tartar
  • 1 cup peanut butter
  • 1 teaspoon vanilla
  • 3 cups rolled oats, divided (1 minute quick oats)
  1. Place 2 sheets of parchment paper on a counter or flat surface. Set aside.
  2. In a large nonstick pot or deep skillet, melt butter over medium heat.
  3. Stir in sugar and ½ cup milk until combined.
  4. Add in cream of tartar just when mixture begins to bubble slightly.
  5. Bring to a rolling boil and as soon as it comes to a roiling boil continue cooking for 2 MINUTES while stirring constantly. See note.
  6. Remove from heat.
  7. Stir in peanut butter and vanilla extract.
  8. Add half of the oats and stir until well combined.
  9. Stir in just enough of the remaining milk to create a thick and creamy batter. (may not need all of the milk)
  10. Stir in remaining oats.
  11. Working quickly, drop batter by the spoonful onto the parchment paper. Make them as big or as small as you'd like.
  12. Let the cookies sit for 20-30 minutes to set.
  13. Once set, wrap individually in plastic wrap and store in an airtight container.
ONLY BOIL FOR 2 MINUTES. If you boil too long the finished cookie will be dry, crusty and crumbly. If you don't boil long enough the cookies will not set. (This has happened to me before and I placed them in the fridge for about 20 minute to set them)

Best way to store: Wrap each cookie in plastic wrap and place in an airtight container. If you just store them all piled up in a container without wrapping them in plastic wrap they may stick together.
