Roasted broccoli and sweet potatoes make the perfect duo side dish. Pairs great with grilled, roasted, or baked meats. Easy, healthy and seriously addictive!
Serves: 4
  • 3 small bunches of fresh broccoli
  • 1 medium sweet potato
  • 3 cloves garlic, minced
  • olive oil
  • salt
  1. Preheat oven to 450
  2. Wash and dry broccoli and sweet potato thoroughly.
  3. Cut florets from the stalk and set aside.
  4. Cut sweet potato into even sized cubes.
  5. Place broccoli and sweet potatoes into a large bowl and drizzles with olive oil. Just enough to lightly coat.
  6. Toss to distribute the oil.
  7. Place broccoli and sweet potatoes on a foil-lined baking sheet in a single layer.
  8. Sprinkle with minced garlic and salt.
  9. Baked for 12-14 minutes or until sweet potatoes are tender and broccoli is lightly browned on the tips.
  10. Sprinkle with more salt if desired.
  11. Serve immediately and enjoy.
~TIPS~ Serve this dish immediately! The broccoli just isn't the same after it's sat for a while. Still good just doesn't have that amazing, browned crisp to it. Feel free to add other spices if desired.
