Cajun Kielbasa Couscous Recipe

This stuff is so good!! Fluffy, flavorful couscous topped with spicy sausage, sauteed' peppers, onions and celery. Easy, quick and delicious dinner idea!
  • 14 oz Turkey Kielbasa Sausage (heat and serve)
  • ½ cup green bell peppers, diced
  • ½ cup white onions, diced
  • ½ cup celery, diced
  • 2 cloves garlic, minced
  • 2 cup chicken broth (can use low-sodium broth)
  • ½ cup water
  • 2-3 Tablespoons of butter or olive oil
  • 1 tablespoon dried parsley (plus more for garnish)
  • 2 cups couscous
  • cajun seasoning (optional)
  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
  2. Add sausage and cook until slightly browned.
  3. Add green bell peppers, onions, and celery.
  4. Saute on low until veggies are slightly tender.
  5. Stir in minced garlic.
  6. Cook garlic if desired.
  7. Remove from heat and set aside.
  8. In a pot, add chicken broth, water, and butter.
  9. Bring to a boil.
  10. Stir in the couscous and bring to a boil.
  11. Once boiling, remove from heat, cover and let rest for 5-7 minutes.
  12. When done, fluff with a fork.
  13. Add cajun seasoning if desired.
  14. Plate the couscous and top with the sausage veggie mixture.
  15. Garnish with parsley.
  16. Serve and enjoy!!
If using any other type of sausage you may need to drain the fat a little before adding in the veggies
Add red peppers or others veggies & meats if desired.
Be sure to use a flavorful sausage with the dish since most of the flavor comes from the meat.
