I know I’ve been posting sporadically lately, but I promise it’s because I’ve got A LOT of stuff I’ll be presenting to you guys soon. I’ve been working on so many things (besides the cookbook), and I can hardly stand keeping exciting secrets. Just a few more weeks left, and then I can let the cats out of the bag.
Meanwhile, want some pasta? Since I’ve been running around like a crazy woman, my husband has been amaze-balls with making sure the kids have things to do and places to go so I can work in peace.
The house has been freakishly quiet lately, and I’ve been eating lunches alone. It’s so odd.
I have several recipes that I make, that only I like, like this skinny girl pasta and this bacon florentine pasta I’m sharing today! My husband and boys aren’t big fans of creamy spinach unless it’s spinach dip, so usually, I save this recipe for my solo lunches.
What is Florentine Sauce?
Florentine sauce is a creamy white sauce made with spinach, butter, cream, and garlic. Some folks say it must have white wine to be true florentine sauce. Meh, add some if you like. I prefer to use chicken broth. And I’m telling you, this sauce turns whatever it’s put on into pure comfort food.
What can I use Florentine Sauce on?
Florentine sauce is so versatile! You can use it spooned over vegetables or chicken breast, as a creamy dip or even as a soup base.

It’s been a while since I made this dish and it’s as good as I remembered! That creamy, garlicky parmesan white sauce, sauteed spinach, onions, garlic, and all that bacon!!!
What’s not to love here! Get a huge bowl, curl up on the couch, and watch some trashy reality tv! It made for the perfect lunch break! Don’t forget the garlic bread and garden salad!

Ingredients
- 8 oz thin spaghetti
- 1 tablespoon olive oil
- 1/2 cup onions, diced
- 1 tablespoon garlic, minced
- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 ½ cups chicken broth
- 1 ½ cups whole milk
- 1/2 cup parmesan cheese (can do half parmesan, half mozzarella), shredded
- 1 lb bacon , cooked to a crisp, and crumbled
- se salt & black pepper, to taste
- 5 oz. fresh spinach, chopped
Instructions
- Cook pasta according to package until al dente. Drain & set aside.
- In a large deep skillet, heat olive oil.
- Add onions and saute until tender.
- Add garlic and saute until fragrant.
- Add butter and stir until melted.
- Sprinkle in flour and cook until flour is golden, about 2-3 minutes.
- Slowly pour in chicken broth and milk.
- Let simmer, stirring often until sauce has thickened enough to lightly coat the back of a spoon.
- Stir in parmasan cheese.
- Taste and add salt and black pepper to bring out the taste.
- Add the spinach, and simmer until spinach has wilted
- Stir in noodles.
- Plate and sprinkle on the bacon.

This was a very tasty pasta dish. I made it for the 2nd time tonight. 1st time I added mushrooms and tonight I added chicken (no spinach as I was out). Definitely a keeper!
