I’ve had a really productive Sunday. I usually get a lot done around the house when the weather is cold and windy like today. It puts me in the mood to clean and/or bake!

So I’ve cleaned out my refrigerator, organized my spice drawer and prepped dinner for the entire week. I also managed to bake up this amazing apple pie bread. I’ve been drowning in apples all week after getting a great deal at the Farmers Market. I make apple pie bread religiously around this time of year. I love how it just scents up the entire  house  with those warm, comforting autumn spices.

This apple pie bread recipe bakes up super soft and moist. The crumb topping is to die for. I made this bread around 2:00 pm and it’s now 9:36 pm and it’s almost gone. It never lasts long around here especially after my husband gets to it. He eat huge slabs with his coffee and my toddler loves this stuff.

Cooking time may vary especially depending on the type of loaf pan you use. I prefer using glass loaf pans. Keep a close eye on it after the first hour. The bread is done when a toothpick inserted into the center comes out clean.

BE CAREFUL NOT TO OVERWORK THE FLOUR. STIR JUST UNTIL COMBINED.

Ingredients
  • INGREDIENTS
  • 1/2 cup butter, melted
  • 1 cup buttermilk
  • 1 1/2 cup brown sugar, packed
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups apples, diced
  • CRUMB TOPPING
  • 1/3 cup all-purpose flour
  • 1 teaspoon cinnamon
  • pinch of cloves
  • pinch of nutmeg
  • 1/2 cup brown sugar, packed
  • 2-3 Tablespoons butter, melted
Instructions
  1. Preheat oven to 325
  2. In a medium sized bowl, stir together melted butter, buttermilk, & brown sugar.
  3. Add in the beaten egg and vanilla extract. Stir until sugar has dissolved. Set aside.
  4. In a large bowl, whisk the all-purpose flour, baking soda, salt and cinnamon.
  5. Make a well in the center and pour the wet mixture into the well.
  6. Stir just until flour is dissolved. Do not over stir .
  7. Fold in the finely diced apples.
  8. Grease a loaf pan and pour in the mixture.
  9. In a small bowl add the crumb topping ingredients, except for the butter.
  10. Whisk to combine.
  11. Add in the butter and stir with a fork until it resembles large crumbs.
  12. Sprinkle the crumb mixture on top of the batter.
  13. Bake for 1 hour and 20 minutes or until toothpick inserted in the center comes out clean. Baking times may vary.
  14. Let cool and then eat.
