I know a biscuit hates to see me coming because I can devour a whole pan fresh from the oven. Who would have thought biscuits could be made in so many different ways and varieties (Oreo Biscuits, anyone?)
There are so many biscuit recipes on my blog, and today I’m adding another Southern classic to the lineup.
Introducing 7-Up biscuits, aka billion-dollar biscuits!
I grew up with these buttery, fluffy, rich biscuits being called Billion Dollar Biscuits. Apparently, they go by both names. Before you click off, don’t worry, they don’t taste like 7-Up flavored biscuits. We’ll leave that up to 7-Up Pound Cake!
What are 7-Up Biscuits?
I’m sure you can guess what one of the secret ingredients is in these biscuits, right? Yep, tried & true 7-Up soda. 7-Up biscuits are a type of biscuit known for their ultra-rich, buttery flavor and moist, fluffy texture.
There seems to be some confusion about where the recipe originated. Some say it came from the back of a Bisquick box.
However they came to be, they are absolutely heavenly!
The biscuits you never knew you needed
There are so many reasons to fall in love with this 7-Up biscuit recipe.
- That flavor- Butter, sour cream, and 7-Up come together to create one heck of a texture and flavor. Since melted butter is poured into the bottom of the pan, the bottoms have the buttery crunch that is so incredible!
- Simple ingredients: These buttery biscuit still uses the biscuit basics, with the sour cream and 7-Up replacing the traditional buttermilk.
- Versatile- These easy biscuits are great served with any meal or as a snack. I love these rich biscuits with my morning coffee.
- Crowd-Pleaser- These will likely become one of your favorite biscuit recipes! They get rave reviews whenever I make them for my guests, and my kids think they taste like Fast-food biscuits but better.
Tips for the BEST 7-Up Biscuits
- Make sure your 7-Up is fresh and bubbly to ensure the biscuits lift properly.
- All ingredients should be cold for the best results.
- Handle the biscuit dough gently and quickly so that they are still cold when they go into the oven. Too much kneading will cause tough biscuits.
- Do not twist the biscuit cutter when you press it into the dough. This will seal the biscuits, and they won’t rise properly.
- Use a high-quality salted butter.
Biscquik Option
I do a few things differently when it comes to my 7 Up biscuits recipe, like adding butter to the mix, replacing the shortening with high-quality salted butter, and not using Bisquick baking mix. I find these small changes create the best flavor and texture.
You can absolutely use Bisquick for a quick cheat, though.
Ingredients You’ll Need
- All-purpose Flour
- Baking Powder
- Granulated Sugar
- Sea Salt
- Salted Butter, divided (Use a good quality)
- Sour Cream ( Use full-fat version)
- 7-Up (Or any lemon-lime soda)
How to Make 7-Up Biscuits
- Preheat your oven to 450°F and move the oven rack to the top position.
- Pour 4 tablespoons of melted butter into the bottom of a dark 9-inch round pan or oven-safe skillet. Set aside.
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- Grate 4 tablespoons of cold butter directly into the flour mixture.
- Using a pastry cutter, cut the butter into the flour until the mixture resembles coarse crumbs.
- With a rubber spatula, stir in the sour cream and then add the 7-Up. Gently stir until a dough forms.
- Turn the dough onto a floured surface and knead gently a few times. The dough will be sticky. If the dough is too dry, add more 7-Up. Sprinkle just enough flour over the dough to make it manageable. You want the dough to be slightly sticky.
- Pat the dough out, then fold it into thirds ( like folding a letter). Turn the dough and repeat this step to create flaky layers.
- Finally, pat the dough out into a 1-inch thick rectangle.
- Dip a 2 1/2-inch round biscuit cutter or cookie cutter into flour and then press it straight down into the dough without twisting it.
- Cut out 8 biscuits, rerolling the scraps as needed.
- Place cut biscuits in the buttered pan with sides touching.
- Using a little melted butter from the pan, lightly brush the tops and sides of the biscuits.
- Place the pan into the oven on the top rack.
- Bake for 12-14 minutes or until the center is cooked through. They will not brown much. (I like to broil for the last few minutes. Just be sure to keep an eye on it the entire time it’s broiling.)
- Remove from the oven, and brush the hot biscuits generously (tops and sides) with the remaining butter.
Serving Ideas
Breakfast- Serve with homemade jams like this strawberry jam or blueberry jam. Slather it with sausage gravy, or make delicious egg and cheese biscuits.
Dinner- Serve as the perfect side with a classic fried chicken dinner or with a hearty roast beef meal.
Snack/Dessert- Serve as a base for strawberry shortcake, or drizzle with vanilla glaze for a sweet biscuit.
How to Store & Reheat Leftovers
- Room Temperature – Store in an airtight container for up to 2 days.
- Fridge – Stays fresh for up to 5 days.
- Freezer – Wrap cooled biscuits in aluminum foil and place a freezer-safe container. Freeze for up to 2 months.
- Reheat – If frozen, let thaw at room temperature. Wrap in foil and warm in a 350°F oven for 10 minutes or heat in the microwave for a few seconds.
FAQ’s
Can I use other Lemon-Lime sodas? Yes, you can use other lemon lime sodas for this recipe. However, I’d try to stick with ones that are clear and have a mild flavor, like Sprite. Do not use diet versions.
Can I use yogurt instead of sour cream? Yes, but sour cream gives the best texture and flavor in my opinion.
Can I use vegetable shortening? Yes, you can. Use butter-flavored shortening or a mix of both shortening and butter.
Can I use unsalted butter? Yes, but the taste and color will be different.
Are these biscuits sweet? No, 7-Up biscuits are rich with a mild buttery.

- Bake on the top rack for 12-14 minutes or until the center is cooked through. I like to broil on low for the last couple of minutes to encrouge browning. (These biscuits do not brown much though)Just be sure to keep and eye on it the entire time it's broiling to prevent burning the biscuits)
- Remove from the oven, and immediately brush the tops and sides of the hot biscuits generously with the remaining 2 tablespoons of butter.
