I’m really starting to get into eating asparagus since I’ve finally tried it roasted in the oven. If you’ve never tried roasted asparagus then honey, you are missing out.

It should be against the law to cook asparagus any other way than in the oven. They come out so tender, yet firm with a wonderful woody aroma.  Even my toddler is crazy for these things and he’s not really a huge veggie eater these days.

You certainly can add some jazz to this roasted  asparagus recipe by drizzling them with herb butter or grated cheeses but they are so good simply with a lil olive oil and salt.

Ingredients
 

  • 1 bunch thin, fresh asparagus
  • olive oil
  • salt

Instructions
 

  • ) Preheat oven to 425
  • ) Wash and dry asparagus.
  • ) Cut the woody ends off.
  • ) Drizzle them with olive oil.
  • ) Sprinkle on salt.
  • ) Spread them out on a pan in a single layer.
  • ) Bake for about 7-8 minutes or until slightly tender.
  • ) Servethemhot.
  • ) Add butter or parmesan cheese if desired.

Notes

Cooking time will vary based on the thickness of your asparagus. I cooked in a 425 degree preheated oven for 7 minutes. They should be tender to the bite and yet firm to the touch. When you pick them up they should not droop.
