I heart quick breads!
My luck with yeast bread is very sometimey. Sometimes it’s a huge success and others times it’s an epic fail. I don’t think yeast likes me too much, but quick breads…now these are breads I can get down with!
I love quick breads!! Taking a loaf of homemade quick bread out of the oven makes me feel all domesticated, even if the house is a wreck, laundry is piled up and it’s 2pm and I’m still in pj’s. Don’t judge me.
I go quick bread crazy in the fall and winter months. There are so many varities to try and pretty much fool-proof if you follow the directions and have a little quick bread knowledge under your belt.
Quick breads make wonderful gifts, can easily be turned into muffins, freezes beautifully and there are so many varieties that you’re sure to find one to please everybody!
What the heck are quick breads??
For those just jumping on the quick bread wagon (and welcome!) quick breads are breads that are leavened without using yeast and can be made in a jiffy. None of that rising, proofing and the stuff that yeast breads require. Just mix, pour, bake and out comes fluffy, moist goodness and the house smells divine!!!
Here are a a few quick bread tips to ensure your best loaf!!
Prepare the oven: Always preheat the oven before placing your bread inside. Bake the bread on the center wrack.
Use the best ingredients: As with any recipe always use the best and freshest ingredients. Double check to make sure all of your ingredients are within the expiration date, especially the baking soda and baking powder.
Stir carefully, gently and know when to stop: When mixing the dry ingredients into the wet ingredients be sure to stir ONLY until the dry ingredients are fully moistened and then stop. Do not use a mixer. A few lumps in the batter is perfect. Over-mixing will stimulate the gluten in the flour and this is the main reason why quick breads can come out dry and tough.
Cooling correctly: When removed from the oven let the bread cool in the pan for 10 minutes and then remove from pan and allow to cool completely.

My favorite quick bread recipe from your blog has to be the zucchini bread. I’ve made it several times and my family and I can’t get enough of it. My daughter helps me to make it and I let her lick the batter off the spoon. I tried a recipe for banana bread that was by a famous tv personality and I was greatly disappointed by how bland it was. I then made your recipe for old fashioned banana bread and it was curtains for that bread. Keep up the good work and don’t give up on yeast bread because it’s really not that hard. I recently made some homemade crescent rolls with yeast and they were awesome.

I made the zucchini bread and the pumpkin bread….I love both of them!! I am especially loving the pumpkin bread right now b/c it reminds me of autumn and puts me in an autumn mood!

Monique, I just made the bakery style banana
bread. Let me tell you…..OOOHHHHH! It was sooo good! Normally I’m not a fanatic for breads, cakes, and such. However, this recipe is something from heaven. I’m not exaggerating. I kept going back to get more, more and more. My husband, who doesn’t eat banana bread, actually liked it. My children ate it all up from me. And, they want MORE. So, I guess my favorite quick bread would have to be the bakery style banana bread recipe. Now, that being said…I haven’t tried the other breads yet, so I’ll get back to you on that. As always my dear, you rock!
