I love chicken salad and this easy recipe puts a spicy, mexican spin on it. These little cuties are the perfect appetizer for last minute company because they come together so quickly. I like to serve them as little pinwheel appetizers. They go fast so be prepared.
The filling is creamy, savory, spicy, satifiying and packed with chicken, cheese, spicy mexican tomatoes, spices, and cream cheese.
They look really pretty on a serving tray when you use different color tortillas.

Easy Mexican Chicken Salad Wraps- Pinwheels

Creamy chicken salad with mexican flavors! These appetizer pinwheels are so good and they go fast. Easy and quick to make. Great for parties, holidays, and special occasions!
Ingredients
- 8 oz. cream cheese, softened
- 1-2 Tablespoons Spicy Ranch Dressing
- 10 oz can Rotel Mexican Lime & Cilantro dice tomatoes, drained
- ¼ -1/2 cup red onions, diced
- 2 chicken breast, seasoned, cooked & shredded
- 1 cup colby jack cheese or mexican blend cheese, shredded
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- ½ tablespoon oregano
- salt and pepper to taste
- 6 large flour tortillas
Instructions
- Add all ingredients to bowl, mixing after each ingredients.
- Taste and adjust seasonings if needed.
- Spread onto flour tortilla, leaving about an inch all the way around.
- Roll tightly.
- Wrap in seran wrap and refrigerate rolls for an hour.
- Slice about 1-1½ inch thick.
- Serve.









Made these for super bowl and they were a huge hit. I will be making these again.
I also made these for my Super Bowl party and all of the guess loved them. I decided to make some more today because they are that good!
This receipe looks like it could be used in a quick weeknight dinner. Do you think canned chicken breast would suffice?
I just made these for lunch and they were quite tasty, Next time I will reduce the amount of cream cheese and garlic as it was a little overpowering. Overall very good recipe

I made these for a spa party along with the salsa and they loved them so such they are now requesting them for our christmas party.
I made this the other day and as expected, it was sooo good. The only thing Id recommend to others who are going to try this recipe is buy a brand of tortillas that are really thick. The filling for this wrap is quite thick and I thought just buying any kind of brand of tortillas would be fine, but the filling ended up overpowering the tortilla. But in order to fix that I just triple wrapped it. Nothing wrong with the recipe, just make sure you use the right tortillas if you want it to taste balanced. Great recipe…you always learn through trial and error right?
Very good! Easy to make! Only thing I did.differently was I added more ranch and spice…..just my preference..
